Directions to make sauce:
Wash tomatoes and cut into halves. Then put them in a pot over medium heat, and let them be crushed. At the end strain tomatoes.
Roast garlic and onion with some olive oil in another pot, till the onions be caramelized. Mix the strained tomatoes with caramelized garlic and onion, spices and honey or sugar, by an electronic masher or blender to have a smooth mixture.
Pour the tomato mixture in a cooking dish and bring to boil. Then cook on a low heat for about 1 to 2 hours, until you have a thick sauce.
How to conserve:
Wash the jars intended for canning and put a thick towel in a large pot. Then locate the jars over the towel and put a napkin or towel between them to avoid contacting each other while boiling.
Fill the pot with cold water, in a way that water covers the jar surface. Next, bring it to boil for 30 minutes over medium heat.
After 30 minutes, turn off th heat and let the jars be cold.
With minimum touching, put the jars over a towel in upside-down position.
Hereafter you can fill the jars with special sauce. Do not overfill the jars and put some empty space at the head-space.
After placing the jar lids, boil them in water for 30 minutes, then let them be cool and transfer to the refrigerator.
